NGREDIENTS
Dry Ingredients
- 1 ¼ cups buckwheat flour
- ½ cup coconut sugar
- ¾ cup almond flour
- 6 Tbsp alkalized ceremonial cacao powder or healthy 100% organic cocoa powder
- 1 ½ tsp baking powder
- ½ cup healthy, sugar-free chocolate chips, plus more for the top design
- ½ tsp Maca Powder (Optional)
- ½ tsp Reishi Power (Optional)
- ¼ tsp salt
Wet Ingredients
- 3 medium ripe bananas
- 1 cup coconut milk
- ½ Tbsp vinegar or lemon juice
- 1 tsp vanilla extract
Chocolate Ganache Design
- Your favorite ceremonial chocolate or healthy, sugar-free chocolate
- 3 Tbsp coconut oil
- 3 Tbsp coconut milk
INSTRUCTIONS
- First, preheat the oven to 360°F / 180°C and line an 8-inch loaf pan with parchment paper.
- Add all the dry ingredients, except the chocolate chips, to a large bowl and stir.
- In a separate bowl, mash the bananas with a fork until smooth. Add the coconut milk, vinegar or lemon juice, and vanilla extract, and stir well.
- Pour the wet ingredients into the bowl of dry ingredients and mix until combined. Gently fold in the chocolate chips with a spoon.
Be careful not to overwork the batter. Mix only until just combined for the best texture. - Pour the batter into the prepared loaf pan and bake for about 35 minutes, or until a toothpick inserted into the center comes out clean or with a few sticky crumbs.
The toothpick may hit a melted chocolate chip along the way and look like wet batter, so it’s best to test the loaf in a couple of spots. - After baking, allow the banana loaf to cool before pouring the chocolate ganache on top.
- Melt your chocolate with the coconut oil in a bowl. Then pour in the coconut milk and stir until melted, smooth, and combined.
- Pour the chocolate ganache over the banana loaf and sprinkle chocolate chips on top.
