Dry Cake Ingredients
- 1 cup (160 g) rice flour
- 1 cup (90 g) oat flour (gluten-free)
- 1 tsp baking powder
- ½ tsp baking soda
- ⅓ tsp salt
Wet Cake Ingredients
- ¾ cup (180 g) applesauce
- ½ cup (120 g) canned coconut milk
- ⅓ cup (110 g) maple syrup or any other liquid sweetener
- ¼ cup (80 g) blackstrap molasses
Golden Date Caramel
- 1 cup Medjool dates (approximately 10–12 dates)
- ¾ cup coconut milk
- ½ tsp vanilla extract
- ¼ tsp fine sea salt
Cloud Frosting
- 1 can full-fat coconut cream, chilled
- 3 tbsp maple syrup
- 1 tsp vanilla extract

The Golden Cake
- Preheat your oven to 350°F (177°C) and line a 6 x 9-inch (15 x 23 cm) cake pan with parchment paper, leaving an overhang on each side for easy lifting.
- In a large bowl, gently whisk together all of the dry ingredients, allowing each one to become one beautiful, nourishing blend.
- Pour in the wet ingredients and stir with intention until everything is just combined. Resist the urge to overmix—gentle hands create the most tender cakes.
- Transfer the batter into your prepared pan and smooth the top with a spatula.
- Bake for approximately 35 minutes, or until a toothpick inserted into the center comes out clean with a few soft crumbs attached.

The Cloud Frosting
- Place the can of coconut cream in the refrigerator for 24 hours, allowing nature to work its quiet magic.

- Using a hand mixer, whip the coconut cream for about 1 minute until light and fluffy. Add the maple syrup and vanilla, then continue whipping until silky, smooth, and cloud-like.
- Use immediately or store in a sealed container in the refrigerator for up to 1 week.
The Luscious Caramel
- Remove the pits from the Medjool dates and place them into a heat-safe bowl. Cover with boiling water and allow them to soak for 10 minutes, awakening their soft, caramel-like sweetness. (Even with a high-speed blender, this little ritual makes all the difference.)
- Drain the soaking water and add the softened dates to a high-speed blender with the coconut milk, vanilla extract, and sea salt.
- Blend until velvety smooth, about 1 minute, stopping to scrape down the sides as needed.
- Taste your caramel and adjust if your heart desires. Add a tablespoon of maple syrup for extra sweetness or a touch more vanilla and a pinch of sea salt for a deeper, richer caramel flavor.
